Home Made Breakfast Muffins, for on the go healthy snack…..
RECIPE FOR A HEALTHY TREAT: Home made breakfast muffins, (if you have teenagers that leave getting out of bed, 5 minutes before the bus is due to go, despite, giving them PLENTY of nudges) – also quite nice as a mid afternoon snack!
1 ½ cups of wholemeal plain flour (self raising if you have it)
3oz of butter
Place these in a bowl and make into bread crumbs. Then add:
½ cup of desiccated coconut
Raspberries and blueberries ( I don’t measure these out – handful of each?)
One egg (slightly beaten)
Teaspoon of baking powder
2oz of unrefined sugar (caster or granulated) – the coconut is sweet so you don’t need much – we use less)
½ cup of plain natural yoghurt
Cup of milk
Mix it all together (don’t over stir it) Put into baking tray – with muffin cases if you have them. Sprinkle a bit of muesli or seeds (sunflower / pumpkin whatever you have) on top for a crunch and cook for approx 20mins at 175 degrees in a fan oven
Particularly nice warm!
